Eggplant with Goat Cheese

This is one of Lisa’s favorite recipes for cold and blustery days! A healthy and simple option when paired with her delicious Lentil Soup and some fresh crusty bread. A glass of robust red wine would top off the meal nicely!

Coat sliced eggplant with olive oil, salt, and pepper. Grill until browned then top with balsamic vinegar, crumbled goat cheese, fresh basil and toasted pine nuts.
